Nicola Gilardi began his career in the culinary arts  at the family's restaurant in Italy.  Upon learning the importance of a strong work ethic, he decided to pursue his dream of owning his own restaurant. He was accepted to  Crotto Caurga "I Pas", a culinary school in Italy.  After completion of his training, he worked in various restaurant in such countries as the Sardina Island on the Mediterranean Sea, Germany, Switzerland, and the Carribean Islands.  In 1991, he moved to New York to fufill his dreams since he was a child.  From there he helped to open ITres Merli in Chicago.  The opportunity soon opened for him to become part owner of a Teatro Ristorante in Springfield Missouri.  He was finally getting closer to his dream of owning his own restaurant.  It was also at Teatro's that he meet his future wife Monica and her son J.R.  In October of 1998 they opened Gilardi's Ristorante.

    "Every customer of mine is not only treasured for the existence of my business but also as a friend.  My employees and I strive to provide the best Italian dining experience possible.  My business thrives on people who are regulars.  About ninety percent of our customer base are regulars.  The remaining ten percent will be after the first dinner.  Thanks not only to me but also to my employees I am realizing my dream of owning my own restaurant "
